- 2 large Portobello mushroom caps, stems removed
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- 4 whole wheat burger buns
- Optional toppings: lettuce, tomato, onion, avocado, your favorite burger sauce
Instructions
- Clean the mushroom caps gently with a damp cloth.
- In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper.
- Brush the marinade generously over both sides of the mushroom caps. Let them marinate for at least 15 minutes.
- Preheat your grill to medium-high heat.
- Place the marinated mushroom caps gill-side down on the preheated grill.
- Grill for about 5-7 minutes per side, or until tender and slightly charred.
- While the mushrooms are grilling, lightly toast your burger buns on the grill if desired.
- Assemble your burgers by placing a grilled Portobello mushroom cap on the bottom bun.
- Add your favorite toppings and the top bun.
Notes
- For extra flavor, you can add a pinch of smoked paprika to the marinade.
- If you don’t have a grill, you can also roast the mushrooms in the oven at 400°F (200°C) for 15-20 minutes, flipping halfway through.
