  • 2 large Portobello mushroom caps, stems removed
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • 4 whole wheat burger buns
  • Optional toppings: lettuce, tomato, onion, avocado, your favorite burger sauce


Instructions

  1. Clean the mushroom caps gently with a damp cloth.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper.
  3. Brush the marinade generously over both sides of the mushroom caps. Let them marinate for at least 15 minutes.
  4. Preheat your grill to medium-high heat.
  5. Place the marinated mushroom caps gill-side down on the preheated grill.
  6. Grill for about 5-7 minutes per side, or until tender and slightly charred.
  7. While the mushrooms are grilling, lightly toast your burger buns on the grill if desired.
  8. Assemble your burgers by placing a grilled Portobello mushroom cap on the bottom bun.
  9. Add your favorite toppings and the top bun.

Notes

  • For extra flavor, you can add a pinch of smoked paprika to the marinade.
  • If you don’t have a grill, you can also roast the mushrooms in the oven at 400°F (200°C) for 15-20 minutes, flipping halfway through.
