Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Lemon wedges for serving


Instructions

  1. Preheat your grill to medium-high heat.
  2. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  3. In a large bowl, combine the olive oil, minced garlic, smoked paprika, oregano, thyme, salt, and pepper.
  4. Add the peeled and deveined shrimp to the bowl and toss to coat evenly with the marinade.
  5. Thread the marinated shrimp, red bell pepper chunks, yellow bell pepper chunks, and red onion chunks onto the skewers, alternating the ingredients.
  6. Grill the kabobs for 2-3 minutes per side, or until the shrimp are pink and opaque and the vegetables are slightly charred and tender-crisp.
  7. Remove the kabobs from the grill and serve hot with lemon wedges.

Notes

  • For extra flavor, you can add other vegetables like cherry tomatoes, zucchini, or mushrooms to your kabobs.
