- 1 pound large shrimp, peeled and deveined
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks

- 1 tablespoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- Lemon wedges for serving
Instructions
- Preheat your grill to medium-high heat.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a large bowl, combine the olive oil, minced garlic, smoked paprika, oregano, thyme, salt, and pepper.
- Add the peeled and deveined shrimp to the bowl and toss to coat evenly with the marinade.
- Thread the marinated shrimp, red bell pepper chunks, yellow bell pepper chunks, and red onion chunks onto the skewers, alternating the ingredients.
- Grill the kabobs for 2-3 minutes per side, or until the shrimp are pink and opaque and the vegetables are slightly charred and tender-crisp.
- Remove the kabobs from the grill and serve hot with lemon wedges.
Notes
- For extra flavor, you can add other vegetables like cherry tomatoes, zucchini, or mushrooms to your kabobs.
- Adjust the amount of smoked paprika and other seasonings to your preference.
