Simple recipe for making flavorful, colorful vegetable kabobs perfect for grilling at your next barbecue.

- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 yellow squash, sliced 1/2 inch thick
- 1 zucchini, sliced 1/2 inch thick
- 1 red onion, cut into 1-inch wedges
- 1 cup cherry tomatoes
- 1 cup button mushrooms
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon soy sauce or tamari
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 12 metal or soaked wooden skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes before use.
- In a small bowl, whisk together the olive oil, balsamic vinegar, soy sauce, smoked paprika, garlic powder, and black pepper to make the marinade.
- Place all the cut vegetables in a large bowl. Pour the marinade over the vegetables and toss gently to coat them evenly. Let them marinate for 15 minutes.
- Preheat your grill to medium-high heat (about 400 degrees Fahrenheit). Clean and lightly oil the grill grates to prevent sticking.
- Thread the marinated vegetables onto the skewers, alternating colors and types for an attractive presentation. Pack them snugly, but not too tightly.
- Place the kabobs directly on the oiled grill grates.
- Grill for 8 to 12 minutes total, turning every 3 to 4 minutes, until the vegetables are tender-crisp and show nice grill marks.
- Remove from the grill and serve immediately.
Notes
- For extra flavor, brush the vegetables with a little extra marinade during the first few minutes of grilling.
- If you prefer softer vegetables, cover the grill for the first half of the cooking time to trap steam.
- Use metal skewers for easier handling and consistent cooking, or ensure wooden skewers are fully submerged during soaking.
