Ingredients

- 1 zucchini, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 8 ounces large mushrooms, halved
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon dried Italian seasoning
- Salt and black pepper to taste
Instructions
- Preheat grill to medium-high heat.
- In a large bowl, combine the zucchini, red bell pepper, yellow bell pepper, red onion, and mushrooms.
- In a small bowl, whisk together the olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the vegetables and toss to coat evenly.
- Thread the vegetables onto skewers. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
- Grill the skewers for 10-15 minutes, turning occasionally, until the vegetables are tender-crisp and slightly charred.
- Serve hot.
Notes
- You can use any vegetables you like for these skewers, such as cherry tomatoes, cherry tomatoes, eggplant, or corn on the cob.
- Adjust the grilling time based on your grill and desired level of doneness.
- These skewers can also be cooked in a grill pan on the stovetop or roasted in the oven.
