A simple recipe for preparing flavorful ground turkey served over rice with fresh vegetables for a fast weeknight meal.

- 1 lb ground turkey (93% lean)
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked brown rice
- 1 cup frozen corn, thawed
- 1 cup black beans, rinsed and drained
- 1/2 cup salsa
- 1/2 cup shredded lettuce
- 1/4 cup chopped cilantro
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 4 minutes.
- Add the minced garlic to the skillet and cook for 1 minute until fragrant.
- Add the ground turkey to the skillet. Break it up with a spoon and cook until browned, about 6 to 8 minutes. Drain any excess fat.
- Stir in the cumin, chili powder, oregano, salt, and pepper. Cook for 1 minute, stirring to coat the turkey.
- Add the thawed corn and rinsed black beans to the skillet. Cook until heated through, about 3 minutes. Stir in the salsa.
- Divide the cooked brown rice among four bowls.
- Spoon the ground turkey mixture over the rice in each bowl.
- Top each bowl with shredded lettuce and chopped cilantro. Serve immediately.
Notes
- For a different flavor profile, substitute the cumin and chili powder with 1 tablespoon of soy sauce and 1 teaspoon of grated fresh ginger for an Asian-inspired bowl.
- You can prepare the rice ahead of time to reduce the total preparation time.
- Use cauliflower rice instead of brown rice for a lower carbohydrate option.
