Description

A simple recipe for preparing flavorful ground turkey served over rice with fresh vegetables for a fast weeknight meal.


Ingredients

  • 1 lb ground turkey (93% lean)
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked brown rice
  • 1 cup frozen corn, thawed
  • 1 cup black beans, rinsed and drained
  • 1/2 cup salsa
  • 1/2 cup shredded lettuce
  • 1/4 cup chopped cilantro


Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 4 minutes.
  2. Add the minced garlic to the skillet and cook for 1 minute until fragrant.
  3. Add the ground turkey to the skillet. Break it up with a spoon and cook until browned, about 6 to 8 minutes. Drain any excess fat.
  4. Stir in the cumin, chili powder, oregano, salt, and pepper. Cook for 1 minute, stirring to coat the turkey.
  5. Add the thawed corn and rinsed black beans to the skillet. Cook until heated through, about 3 minutes. Stir in the salsa.
  6. Divide the cooked brown rice among four bowls.
  7. Spoon the ground turkey mixture over the rice in each bowl.
  8. Top each bowl with shredded lettuce and chopped cilantro. Serve immediately.

Notes

  • For a different flavor profile, substitute the cumin and chili powder with 1 tablespoon of soy sauce and 1 teaspoon of grated fresh ginger for an Asian-inspired bowl.
  • You can prepare the rice ahead of time to reduce the total preparation time.
  • Use cauliflower rice instead of brown rice for a lower carbohydrate option.
