Ingredients
Scale
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 (20 ounce) can pineapple chunks, undrained
- 1/2 cup soy sauce
- 1/2 cup brown sugar, packed
- 1/4 cup ketchup
- 1 tablespoon cornstarch
- 1 tablespoon white vinegar
- 1 teaspoon ground ginger
- 1/4 teaspoon garlic powder
Instructions
- Place the chicken pieces in the bottom of your slow cooker.
- In a medium bowl, whisk together the brown sugar, soy sauce, ketchup, cornstarch, vinegar, ginger, and garlic powder until the sugar dissolves and the mixture is smooth.
- Pour the sauce mixture over the chicken in the slow cooker.
- Add the undrained pineapple chunks over the top.
- Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is cooked through and easily shreds.
- Remove the chicken and shred it using two forks. Return the shredded chicken to the sauce and stir to coat.
- Serve the Hawaiian Chicken over rice or with a side of steamed vegetables.
Notes
- For a thicker sauce, remove the lid during the last 30 minutes of cooking.
- You can substitute chicken thighs for breasts for a moister result.
- Serve this dish with white rice or cauliflower rice.
