- 2 large very ripe bananas, mashed
- 2 cups rolled oats (old-fashioned)
- 2 large eggs, lightly beaten
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking pan or line it with parchment paper.
- In a large bowl, mash the ripe bananas until mostly smooth.
- Add the beaten eggs to the mashed banana and mix well.
- Stir in the rolled oats, ground cinnamon, and baking powder until just combined. Do not overmix.
- Spread the mixture evenly into the prepared baking pan.
- Bake for 20 to 25 minutes, or until the edges are lightly golden and the center is set.
- Let the bars cool completely in the pan before slicing into squares.
Notes
- Use very ripe bananas; the riper they are, the sweeter the bars will be without needing added sugar.
- For easier removal, use parchment paper that hangs over the sides of the pan.
- Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to one week.
