Description
A vibrant and flavorful corn salad inspired by Elote, but made lighter and healthier with the creamy goodness of Greek yogurt.
Ingredients

- 1 pound corn kernels (fresh or frozen)
- 1/2 cup plain Greek yogurt
- 1/4 cup chopped fresh cilantro
- 2 tablespoons chopped red onion
- 1 tablespoon lime juice
- 1/4 teaspoon chili powder
- Salt to taste
- Black pepper to taste
Instructions
- If using frozen corn, thaw it first. If using fresh corn, you can either grill it, boil it, or pan-sear it until tender and slightly charred.
- In a medium bowl, combine the cooked corn kernels, Greek yogurt, cilantro, red onion, and lime juice.
- Stir in the chili powder.
- Season with salt and black pepper to your liking.
- Mix everything gently until well combined.
- Serve immediately or chill for later.
Notes
- For an extra smoky flavor, grill the corn before cutting it off the cob.
- Add a pinch of cayenne pepper for a spicier kick.
- You can also add crumbled cotija cheese for a more traditional Elote flavor, but this will increase the fat and sodium content.
- This salad is delicious served as a side dish or a light lunch.
