Description

A vibrant and flavorful corn salad inspired by Elote, but made lighter and healthier with the creamy goodness of Greek yogurt.


Ingredients

Scale
  • 1 pound corn kernels (fresh or frozen)
  • 1/2 cup plain Greek yogurt
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped red onion
  • 1 tablespoon lime juice
  • 1/4 teaspoon chili powder
  • Salt to taste
  • Black pepper to taste


Instructions

  1. If using frozen corn, thaw it first. If using fresh corn, you can either grill it, boil it, or pan-sear it until tender and slightly charred.
  2. In a medium bowl, combine the cooked corn kernels, Greek yogurt, cilantro, red onion, and lime juice.
  3. Stir in the chili powder.
  4. Season with salt and black pepper to your liking.
  5. Mix everything gently until well combined.
  6. Serve immediately or chill for later.

Notes

  • For an extra smoky flavor, grill the corn before cutting it off the cob.
  • Add a pinch of cayenne pepper for a spicier kick.
  • You can also add crumbled cotija cheese for a more traditional Elote flavor, but this will increase the fat and sodium content.
  • This salad is delicious served as a side dish or a light lunch.
