Description

A hearty, protein-packed chili using lean ground turkey and beans, suitable for stovetop or slow cooker preparation.


Ingredients

  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 pound lean ground turkey (93% lean or higher)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup low-sodium chicken broth
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and bell pepper; cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add ground turkey to the pot. Break it up with a spoon and cook until browned completely. Drain any excess fat.
  4. Stir in chili powder, cumin, oregano, and cayenne pepper. Cook for 1 minute, stirring constantly.
  5. Pour in crushed tomatoes, tomato sauce, rinsed beans, and chicken broth. Stir well to combine all ingredients.
  6. Bring the chili to a simmer. Reduce heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For best flavor, simmer for 1 hour.
  7. Season with salt and pepper to your taste before serving.
  8. For slow cooker method: Brown turkey and sauté vegetables on the stovetop first. Transfer all ingredients to the slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours.

Notes

  • For a thicker chili, uncover the pot during the last 15 minutes of simmering.
  • Serve this chili topped with plain Greek yogurt instead of sour cream for extra protein.
  • This recipe freezes well for future quick meals. Cool completely before transferring to freezer-safe containers.
