Ingredients
Scale
- 1 large egg yolk
- 2 anchovy fillets, minced
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1/2 cup extra virgin olive oil
- 2 tablespoons grated Parmesan cheese
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- In a medium bowl, whisk together the egg yolk, minced anchovy fillets, minced garlic, Dijon mustard, and fresh lemon juice until well combined.
- Slowly drizzle in the olive oil in a thin stream while continuously whisking. This creates an emulsion, making the dressing creamy.
- Continue whisking until all the olive oil is incorporated and the dressing is thick and smooth.
- Stir in the grated Parmesan cheese.
- Season with salt and freshly ground black pepper to taste.
- Serve immediately or store in an airtight container in the refrigerator for up to 3-4 days.
Notes
- For a thinner dressing, add a tablespoon or two of water or milk until desired consistency.
- If you are concerned about raw egg, use a pasteurized egg yolk.
- The anchovies melt into the dressing and provide a salty, umami depth without tasting fishy.
