- 2 cups rolled oats
- 1/2 cup chopped nuts (almonds, walnuts, pecans)
- 1/4 cup seeds (chia seeds, pumpkin seeds, sunflower seeds)
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 300°F (150°C).
- In a large bowl, combine rolled oats, chopped nuts, and seeds.
- In a separate small bowl, whisk together melted coconut oil, honey (or maple syrup), vanilla extract, cinnamon, and salt.
- Pour the wet ingredients over the dry ingredients and stir until everything is well coated.
- Spread the mixture evenly onto a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, stirring halfway through, until golden brown and fragrant.
- Remove from oven and let it cool completely on the baking sheet. Do not stir while cooling to encourage cluster formation.
- Once cooled, break the granola into clusters.
Notes
- For extra crunchy clusters, press the granola down firmly on the baking sheet before baking.
- Feel free to customize with your favorite nuts, seeds, and dried fruits.
- Store in an airtight container at room temperature for up to two weeks.
