Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- In a large bowl, combine the sliced peaches, 1/2 cup granulated sugar, 1/4 cup light brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss gently to coat the peaches evenly. Pour the peach mixture into the prepared baking dish.
- In a separate medium bowl, whisk together the flour, 1/2 cup granulated sugar, 1/2 cup light brown sugar, baking powder, and salt.
- Pour in the melted butter and milk into the dry ingredients. Stir until just combined. Do not overmix; a few lumps are fine.
- Carefully spoon the topping mixture evenly over the peaches in the baking dish. It will look like a thin batter.
- Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
- Remove from the oven and let cool for at least 15 minutes before serving. This allows the filling to set slightly.
- Serve warm, perhaps with a scoop of vanilla ice cream.
Notes
- Choose ripe, fragrant peaches for the best flavor.
- If fresh peaches are not available, you can use two 29-ounce cans of sliced peaches, drained. Adjust sugar to taste as canned peaches may be sweeter.
- Do not stir the topping into the peaches; simply spoon it over the top.
- The cobbler is best served warm on the day it’s made. Leftovers can be stored covered in the refrigerator for up to 3 days.
