Description
This recipe provides simple instructions for making tender, caramelized sweet potatoes coated in a sweet honey and cinnamon glaze.
Ingredients
Scale
- 2 large sweet potatoes, peeled and cubed (about 1 inch pieces)
- 3 tablespoons olive oil
- 3 tablespoons honey
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Pinch of black pepper
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, toss the cubed sweet potatoes with the olive oil until they are evenly coated.
- In a small bowl, whisk together the honey, cinnamon, salt, and pepper.
- Pour the honey mixture over the sweet potatoes and toss gently until every piece has a light coating of the glaze.
- Spread the sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary for better roasting.
- Roast for 20 to 25 minutes, flipping the potatoes halfway through the cooking time. The potatoes are done when they are tender when pierced with a fork and the edges are slightly caramelized.
- Serve immediately.
Notes
- For extra crunch, toss 1/4 cup of chopped pecans or walnuts with the potatoes during the last 5 minutes of roasting.
- If you prefer a less sweet glaze, reduce the honey to 2 tablespoons and add 1/4 teaspoon of nutmeg.
- To achieve maximum caramelization, ensure the potatoes are in a single layer on the baking sheet.
