Description

This recipe provides simple instructions for making tender, caramelized sweet potatoes coated in a sweet honey and cinnamon glaze.

  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the cubed sweet potatoes with the olive oil until they are evenly coated.
  3. In a small bowl, whisk together the honey, cinnamon, salt, and pepper.
  4. Pour the honey mixture over the sweet potatoes and toss gently until every piece has a light coating of the glaze.
  5. Spread the sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary for better roasting.
  6. Roast for 20 to 25 minutes, flipping the potatoes halfway through the cooking time. The potatoes are done when they are tender when pierced with a fork and the edges are slightly caramelized.
  7. Serve immediately.

Notes

  • For extra crunch, toss 1/4 cup of chopped pecans or walnuts with the potatoes during the last 5 minutes of roasting.
  • If you prefer a less sweet glaze, reduce the honey to 2 tablespoons and add 1/4 teaspoon of nutmeg.
  • To achieve maximum caramelization, ensure the potatoes are in a single layer on the baking sheet.
