Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
- In a small bowl, whisk together the melted butter, minced garlic, and honey until well combined.
- Place the cut carrots in a large bowl. Pour the honey garlic butter mixture over the carrots. Toss well until all the carrots are evenly coated.
- Spread the coated carrots in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary for better roasting.
- Roast for 20 to 25 minutes, stirring halfway through, until the carrots are tender and slightly caramelized at the edges.
- Remove from the oven. Sprinkle with salt and pepper. Garnish with fresh chopped parsley before serving.
Notes
- For a deeper flavor, you can use maple syrup instead of honey.
- If you prefer softer carrots, you can steam them for 5 minutes before tossing them in the glaze and roasting.
