Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Place the cut carrots on a large baking sheet.
- In a small bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper until combined.
- Pour the butter mixture over the carrots and toss them well to coat every piece evenly.
- Spread the carrots into a single layer on the baking sheet. Do not overcrowd the pan.
- Roast for 20 to 25 minutes, tossing halfway through, until the carrots are tender and slightly caramelized.
- Remove from the oven, sprinkle with fresh parsley, and serve immediately.
Notes
- For extra caramelization, you can briefly place the carrots under the broiler for the last 1-2 minutes, watching closely to prevent burning.
- If you prefer a stronger garlic flavor, use 1 teaspoon of garlic powder instead of fresh minced garlic.
