Description

A simple recipe for making sweet and spicy chicken using honey and harissa paste, cooked on a single sheet pan with vegetables.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1.5-inch pieces
  • 1 large sweet potato, peeled and cubed
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 3 tablespoons harissa paste
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the cubed sweet potato and onion wedges. Toss them with 1 tablespoon of olive oil, salt, and pepper. Spread the vegetables in a single layer on the prepared baking sheet.
  3. In a small bowl, whisk together the harissa paste, honey, lemon juice, cumin, and the remaining 1 tablespoon of olive oil to create the glaze.
  4. Add the chicken pieces to the bowl with the glaze. Toss until the chicken is fully coated.
  5. Arrange the glazed chicken pieces among the vegetables on the baking sheet, ensuring everything is in a single layer for even cooking.
  6. Bake for 20 to 25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the vegetables are tender.
  7. If the glaze is not sticky enough, you can briefly broil for the last 1-2 minutes, watching closely to prevent burning.
  8. Serve immediately.

Notes

  • To adjust the spice level, start with 2 tablespoons of harissa paste for less heat, or add an extra teaspoon of harissa for more intensity.
  • You can substitute the sweet potatoes with carrots or bell peppers.
  • For a grilled version, marinate the chicken for 30 minutes before grilling over medium-high heat until done.
