Description
A simple recipe for sweet and tart roasted pineapple coated in a honey and lime glaze, perfect as a side dish or light dessert.

- 1 whole fresh pineapple, peeled, cored, and cut into 1-inch thick rings or spears
- 3 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1 tablespoon unsalted butter, melted
- Pinch of salt
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
- In a small bowl, whisk together the honey, lime juice, lime zest, melted butter, and salt to create the glaze.
- Place the pineapple pieces on the prepared baking sheet in a single layer.
- Brush the tops of the pineapple pieces generously with half of the honey lime glaze.
- Roast for 15 minutes.
- Remove the pan from the oven, flip the pineapple pieces, and brush with the remaining glaze.
- Return to the oven and roast for another 10 to 15 minutes, or until the edges are slightly caramelized and the fruit is tender.
- Serve warm.
Notes
- For extra flavor, sprinkle a small amount of chili powder or finely grated fresh ginger over the pineapple before the final roasting step.
- To prepare the pineapple, cut off the top and bottom, stand it upright, and slice off the skin in strips following the curve of the fruit. Remove the brown eyes with a paring knife. Cut into rings or spears and remove the core from each piece.
- If you prefer a more intense caramelization, you can briefly place the pineapple under the broiler for the last 1-2 minutes, watching carefully to prevent burning.
