Description

Make rich, fudgy brownies infused with hot chocolate flavor, topped with a toasted marshmallow swirl and a simple chocolate drizzle.


Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup hot chocolate mix (standard powder, not the drink kind)
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows (for swirl)
  • 1/4 cup semi-sweet chocolate chips (for drizzle)
  • 1 tablespoon heavy cream (for drizzle)


Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk the melted butter and sugar together until combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, flour, salt, and hot chocolate mix.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Fold in the 1/2 cup of chocolate chips.
  6. Spread the batter evenly into the prepared pan.
  7. Sprinkle the 1 cup of mini marshmallows evenly over the top of the batter.
  8. Bake for 28 to 32 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
  9. While the brownies cool slightly, prepare the drizzle: melt the remaining 1/4 cup chocolate chips with the heavy cream in a small microwave-safe bowl in 20-second intervals, stirring until smooth.
  10. Drizzle the chocolate ganache over the cooled brownies.
  11. For the toasted effect, place the pan under the broiler for 30 to 60 seconds, watching constantly until the marshmallows are lightly browned. Remove immediately.
  12. Let the brownies cool completely before lifting them out of the pan using the parchment paper overhang and cutting into squares.

Notes

  • For an extra deep chocolate flavor, use dark cocoa powder in place of standard cocoa powder.
  • If you prefer a thicker swirl, mix the 1 cup of marshmallows with 1 tablespoon of milk and swirl that mixture over the batter before baking.
