- 2 large eggs
- 1 tablespoon milk
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon butter, divided
- 2 slices of your favorite bread
- 2 slices of cheese (cheddar, Swiss, or provolone work well)
- Optional: Cooked bacon, ham, or sautéed vegetables
Instructions
- Whisk eggs, milk, salt, and pepper in a bowl until well combined.
- Heat 1/2 tablespoon butter in a non-stick skillet over medium heat.
- Pour the egg mixture into the skillet and cook, stirring occasionally, until almost set but still slightly wet on top.
- Carefully flip the omelet and cook for another 30 seconds. Slide the omelet onto a plate.
- Wipe out the skillet and add the remaining 1/2 tablespoon butter.
- Place the bread slices in the skillet and top each with cheese.
- If using, add optional fillings on top of the cheese.
- Once the cheese is melted and the bread is golden brown on one side, carefully place the cooked omelet on top of one slice of bread (cheese side up).
- Place the other slice of bread on top of the omelet, cheese side down.
- Gently press the sandwich together.
- Cook for 2-3 minutes per side, until the bread is golden brown and the cheese is fully melted.
- Slice in half and serve immediately.

- For a crispier omelet ‘bread’, cook it a little longer until set.
