Easy Instant Pot Lemon Chicken with a bright and flavorful sauce.

- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/4 cup fresh lemon juice
- 1 tbsp honey or maple syrup
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp cornstarch
- 2 tbsp cold water
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Pat the chicken dry with paper towels. Season with salt and pepper.
- Set your Instant Pot to the ‘Sauté’ function. Add olive oil. Once hot, add the chicken and brown on all sides for 2-3 minutes per side. You may need to do this in batches. Remove chicken from the pot and set aside.
- Add the chopped onion to the pot and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and scrape the bottom of the pot with a wooden spoon to deglaze and loosen any browned bits.
- Stir in the lemon juice, honey or maple syrup, and Italian seasoning.
- Return the chicken to the Instant Pot.
- Secure the lid and set the vent to ‘Sealing’. Select the ‘Manual’ or ‘Pressure Cook’ function and set the time for 8 minutes for chicken thighs or 6 minutes for chicken breasts.
- Once the cooking cycle is complete, let the pressure release naturally for 5 minutes, then carefully do a quick release of any remaining pressure.
- Carefully remove the chicken from the pot and set it aside on a plate.
- Set the Instant Pot to the ‘Sauté’ function. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
- Slowly whisk the cornstarch slurry into the sauce in the Instant Pot. Stir continuously until the sauce thickens, about 2-3 minutes.
- Return the chicken to the pot and coat it with the thickened sauce.
- Serve hot, garnished with fresh parsley if desired.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the sauce.
- Serve this lemon chicken over rice, pasta, or with your favorite vegetables.
- You can adjust the amount of lemon juice and honey to your taste.
