- 4 ears of corn, husked
- 1 cup of water
- 2 tablespoons of mayonnaise
- 2 tablespoons of sour cream
- 1/4 cup of crumbled cotija cheese
- 2 tablespoons of chopped fresh cilantro
- 1 tablespoon of lime juice
- 1/2 teaspoon of chili powder
- Pinch of cayenne pepper (optional)
Instructions
- Place the corn and water in the Instant Pot.
- Secure the lid and set the valve to sealing.
- Cook on high pressure for 3 minutes.
- Allow for a quick pressure release.
- Carefully remove the corn from the Instant Pot.
- In a small bowl, mix together the mayonnaise, sour cream, cilantro, lime juice, chili powder, and cayenne pepper (if using).
- Spread the mixture evenly over the corn.
- Sprinkle with cotija cheese.
- Serve immediately.
Notes
- You can grill the corn after cooking it in the Instant Pot for a smoky flavor.
- Adjust the spice level to your preference.
- If you can’t find cotija cheese, feta cheese can be substituted.
