Description

Create delicious vegan pulled pork sandwiches using tender jackfruit slow-cooked in a smoky BBQ sauce. This easy recipe is perfect for a satisfying and flavorful meal.

Ingredients

Scale
  • 2 cans (20 ounces each) young green jackfruit in brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup your favorite BBQ sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 4-6 hamburger buns
  • Optional toppings: coleslaw, pickles, sliced red onion

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Drain and rinse the jackfruit. Remove any tough core pieces and seeds. Shred the jackfruit with your fingers or two forks to resemble pulled pork.
  3. Heat olive oil in an oven-safe skillet or Dutch oven over medium heat. Add the sliced onion and cook until softened, about 5-7 minutes.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Stir in the shredded jackfruit, BBQ sauce, apple cider vinegar, brown sugar, smoked paprika, and chili powder. Mix well to coat the jackfruit evenly.
  6. Season with salt and black pepper to taste.
  7. Cover the skillet or Dutch oven and transfer it to the preheated oven.
  8. Bake for 30-40 minutes, stirring halfway through, until the jackfruit is tender and the sauce has thickened.
  9. While the jackfruit is baking, toast your hamburger buns if desired.
  10. Serve the pulled jackfruit on the toasted buns, with your favorite toppings.

Notes

  • Ensure you are using young green jackfruit in brine, not ripe jackfruit in syrup, as the texture is crucial for this recipe.
  • Adjust the BBQ sauce and spices to your personal preference.
  • For a spicier sandwich, add a pinch of cayenne pepper or a dash of hot sauce.
