Authentic Baked Jamaican Jerk Chicken

Description

Make flavorful Jamaican Jerk Chicken in your oven. This recipe uses a traditional marinade for deep island spice and heat.


Ingredients

  • 3 lbs chicken pieces (thighs and drumsticks recommended)
  • 1/2 cup soy sauce
  • 1/4 cup vegetable oil
  • 1/4 cup lime juice
  • 2 tablespoons brown sugar
  • 1 tablespoon ground allspice
  • 1 tablespoon dried thyme
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 4 scallions, chopped
  • 1 large onion, chopped
  • 6 cloves garlic, minced
  • 2 scotch bonnet peppers, minced (remove seeds for less heat)
  • 1 inch ginger, grated


Instructions

  1. Combine soy sauce, oil, lime juice, brown sugar, allspice, thyme, pepper, salt, nutmeg, cinnamon, and cloves in a bowl. Mix well.
  2. Add scallions, onion, garlic, scotch bonnet peppers, and ginger to the marinade. Stir to combine the jerk paste.
  3. Place chicken pieces in a large resealable bag or non-reactive dish. Pour the marinade over the chicken, ensuring all pieces are coated.
  4. Refrigerate and marinate for at least 4 hours, or preferably overnight for the best flavor.
  5. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Line a baking sheet with foil and place a wire rack on top.
  6. Arrange the marinated chicken pieces on the wire rack. Discard any remaining marinade.
  7. Bake for 45 to 55 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the skin is slightly charred.
  8. For crispier skin, switch the oven to broil for the last 2-3 minutes, watching closely to prevent burning.
  9. Let the chicken rest for 5 minutes before serving.

Notes

  • For grilling, cook over medium indirect heat for 40-50 minutes, turning occasionally.
  • If you cannot find scotch bonnet peppers, use habanero peppers as a substitute.
  • Serve this chicken with traditional Jamaican Rice and Peas for a complete meal.
