Description
Bake boneless, skinless chicken breasts until they are perfectly juicy and tender every time using this simple lemon herb method.
Ingredients
Scale
- 4 boneless skinless chicken breasts (about 6 oz each)
- 2 tablespoons olive oil
- 1 large lemon, juiced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, thyme, garlic powder, salt, and pepper to create the marinade.
- Place the chicken breasts in a shallow dish or a zip-top bag. Pour the marinade over the chicken, ensuring all pieces are coated. Let the chicken marinate for at least 15 minutes, or up to 4 hours in the refrigerator.
- Remove the chicken from the marinade and place it in the prepared baking dish in a single layer. Discard any remaining marinade.
- Bake for 20 to 25 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) when checked with a meat thermometer in the thickest part of the breast.
- Remove the chicken from the oven and let it rest on a cutting board, loosely tented with foil, for 5 to 10 minutes before slicing or serving. This resting period keeps the juices inside the meat.
Notes
- For extra moisture, you can lightly pound the thickest part of the chicken breast to an even thickness before marinating.
- Always use a meat thermometer to check for doneness; do not rely only on the cooking time.
- This chicken is excellent for meal prep; store cooled, sliced chicken in an airtight container for up to 4 days.
