Description

Make a flavorful, low-carb version of classic beef pepper steak using keto-friendly ingredients and a sugar-free sauce thickened with xanthan gum.


Ingredients

  • 1.5 lbs flank steak or sirloin, thinly sliced against the grain
  • 1 tablespoon avocado oil or coconut oil
  • 1 medium onion, sliced
  • 2 bell peppers (any color), sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup beef broth
  • 1/4 cup tamari or coconut aminos
  • 1 tablespoon rice vinegar (ensure it is sugar-free)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon xanthan gum
  • 1/4 teaspoon black pepper
  • 1 tablespoon avocado oil (for cooking vegetables)
  • Optional: 1/4 cup sliced mushrooms


Instructions

  1. In a bowl, toss the sliced beef with 1 teaspoon of tamari or coconut aminos. Set aside.
  2. In a small bowl, whisk together the beef broth, remaining tamari/coconut aminos, rice vinegar, sesame oil, black pepper, and xanthan gum until the gum is fully dissolved and no lumps remain. Set the sauce aside.
  3. Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Add the beef in batches, ensuring not to overcrowd the pan. Cook quickly until browned, about 1-2 minutes per side. Remove the beef and set it aside.
  4. Add the remaining 1 tablespoon of oil to the skillet. Add the sliced onions and bell peppers. Stir-fry for 3-4 minutes until they start to soften but remain crisp.
  5. Add the minced garlic and grated ginger to the vegetables. Cook for 1 minute until fragrant.
  6. Return the cooked beef to the skillet with the vegetables.
  7. Pour the prepared sauce mixture over the beef and vegetables. Bring the mixture to a simmer, stirring constantly. The sauce will thicken rapidly due to the xanthan gum. Cook for about 1 minute until the sauce coats the ingredients.
  8. Remove from heat immediately. Serve hot over cauliflower rice.

Notes

  • For a richer flavor, you can marinate the beef in the initial 1 teaspoon of tamari for 30 minutes before cooking.
  • If you prefer not to use xanthan gum, reduce the sauce mixture until it thickens naturally, which will take longer and may result in a thinner sauce.
  • Serve this dish over steamed cauliflower rice to keep the meal fully keto-compliant.
