Description

Make a rich and creamy low-carb vegetable bake using broccoli and cauliflower smothered in a sharp, cheesy sauce, perfect for a ketogenic diet.


Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 4 tablespoons unsalted butter
  • 4 ounces cream cheese, cubed
  • 1 cup heavy whipping cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Gruyère cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/4 cup extra shredded cheddar cheese for topping


Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Steam the broccoli and cauliflower florets until they are tender-crisp, about 4 to 5 minutes. Drain them well and place them in the prepared baking dish.
  3. In a medium saucepan over medium heat, melt the butter. Add the cream cheese and stir until it is mostly melted.
  4. Pour in the heavy whipping cream and bring the mixture to a gentle simmer, stirring constantly. Reduce the heat to low.
  5. Stir in the 1 cup of cheddar cheese and the Gruyère cheese until the sauce is smooth and fully incorporated.
  6. Season the cheese sauce with garlic powder, onion powder, salt, and pepper. Taste and adjust seasonings as needed.
  7. Pour the cheese sauce evenly over the steamed vegetables in the baking dish. Gently toss to coat all the florets.
  8. Sprinkle the remaining 1/4 cup of cheddar cheese over the top of the casserole.
  9. Bake for 20 to 25 minutes, or until the sauce is bubbly and the top is golden brown.
  10. Let the gratin rest for 5 minutes before serving.

Notes

  • For a crispier topping, you can add 1/4 cup of crushed pork rinds mixed with 1 tablespoon of melted butter over the top cheese layer before baking.
  • You can blanch the vegetables instead of steaming if you prefer a firmer texture.
