Description

Prepare a quick, low-carb, high-fat meal featuring ground beef, cheese, and broccoli cooked in one skillet.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 1/2 cup beef broth
  • 4 ounces cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook, breaking it apart, until browned. Drain excess fat.
  2. Add chopped onion to the skillet and cook until softened, about 3 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in broccoli florets, beef broth, salt, pepper, garlic powder, and onion powder. Bring the mixture to a simmer.
  4. Cover the skillet and cook for 5 to 7 minutes, or until the broccoli is tender-crisp.
  5. Reduce heat to low. Add the cubed cream cheese and stir until it melts into the sauce.
  6. Stir in the shredded cheddar cheese until fully melted and combined. Serve immediately from the skillet.

Notes

  • For extra flavor, add 1 teaspoon of Worcestershire sauce (check carb count if strictly monitoring).
  • You can substitute the cheddar cheese with Monterey Jack or Colby cheese.
  • If you prefer softer broccoli, cover and cook for an additional 3 minutes before adding the cheese.
