- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 1/2 cup beef broth
- 4 ounces cream cheese, cubed
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook, breaking it apart, until browned. Drain excess fat.
- Add chopped onion to the skillet and cook until softened, about 3 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Stir in broccoli florets, beef broth, salt, pepper, garlic powder, and onion powder. Bring the mixture to a simmer.
- Cover the skillet and cook for 5 to 7 minutes, or until the broccoli is tender-crisp.
- Reduce heat to low. Add the cubed cream cheese and stir until it melts into the sauce.
- Stir in the shredded cheddar cheese until fully melted and combined. Serve immediately from the skillet.
Notes
- For extra flavor, add 1 teaspoon of Worcestershire sauce (check carb count if strictly monitoring).
- You can substitute the cheddar cheese with Monterey Jack or Colby cheese.
- If you prefer softer broccoli, cover and cook for an additional 3 minutes before adding the cheese.
