Ingredients

  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 (14 ounce) can sweetened condensed milk
  • 4 large egg yolks
  • 1/2 cup key lime juice
  • 1 teaspoon key lime zest
  • Optional: Whipped cream and lime slices for garnish


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine graham cracker crumbs and granulated sugar. Pour in the melted butter and stir until the crumbs are evenly moistened.
  3. Press the crumb mixture firmly and evenly into the bottom of the prepared baking pan. Bake for 10 minutes. Remove from oven and let cool slightly.
  4. In a separate bowl, whisk together the sweetened condensed milk, egg yolks, key lime juice, and key lime zest until smooth and well combined.
  5. Pour the key lime filling evenly over the baked crust.
  6. Bake for 15-20 minutes, or until the filling is set but still has a slight jiggle in the center.
  7. Let the bars cool completely in the pan on a wire rack.
  8. Once cooled, lift the bars out of the pan using the parchment paper overhang. Cut into squares.
  9. Garnish with whipped cream and lime slices, if desired.
