- 1/3 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1 (14 ounce) can sweetened condensed milk
- 4 large egg yolks
- 1/2 cup key lime juice
- 1 teaspoon key lime zest
- Optional: Whipped cream and lime slices for garnish
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, combine graham cracker crumbs and granulated sugar. Pour in the melted butter and stir until the crumbs are evenly moistened.
- Press the crumb mixture firmly and evenly into the bottom of the prepared baking pan. Bake for 10 minutes. Remove from oven and let cool slightly.
- In a separate bowl, whisk together the sweetened condensed milk, egg yolks, key lime juice, and key lime zest until smooth and well combined.
- Pour the key lime filling evenly over the baked crust.
- Bake for 15-20 minutes, or until the filling is set but still has a slight jiggle in the center.
- Let the bars cool completely in the pan on a wire rack.
- Once cooled, lift the bars out of the pan using the parchment paper overhang. Cut into squares.
- Garnish with whipped cream and lime slices, if desired.

- For a richer crust, you can add a tablespoon of granulated sugar to the graham cracker mixture.
