Description
Make a flavorful Korean BBQ Chicken Sandwich featuring sticky, sweet, and spicy glazed chicken on a soft bun with crisp toppings.
Ingredients
Scale
- 1.5 lbs boneless, skinless chicken thighs, cut into sandwich-sized pieces
- 1/4 cup soy sauce
- 2 tablespoons Gochujang (Korean chili paste)
- 2 tablespoons honey or brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon black pepper
- 4 brioche buns or potato rolls
- 1 tablespoon vegetable oil
- For Quick Slaw: 1 cup shredded cabbage, 1/4 cup mayonnaise, 1 tablespoon rice vinegar, 1 teaspoon sugar, salt to taste
- For Garnish: Sesame seeds, sliced green onions
Instructions
- Combine soy sauce, Gochujang, honey, rice vinegar, sesame oil, garlic, ginger, and pepper in a bowl to make the marinade.
- Add the chicken pieces to the marinade, toss to coat completely, and let it marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- Prepare the quick slaw: Mix shredded cabbage with mayonnaise, rice vinegar, sugar, and salt. Set aside.
- Heat the vegetable oil in a large skillet or grill pan over medium-high heat.
- Remove the chicken from the marinade, letting excess drip off, and place the chicken in the hot pan. Cook for 5-7 minutes per side until cooked through and slightly caramelized.
- If any marinade remains, pour it over the chicken during the last minute of cooking to create a sticky glaze.
- Lightly toast the inside of the buns.
- Assemble the sandwich: Place a piece of glazed chicken on the bottom bun. Top generously with the quick slaw. Sprinkle with sesame seeds and green onions, then place the top bun on.
Notes
- For extra heat, add a pinch of Gochugaru (Korean chili flakes) to the marinade.
- You can grill the chicken instead of pan-frying for a smoky flavor.
- Use thick-cut potato rolls as they hold up well against the sticky sauce.
