Korean BBQ Chicken Sandwich Recipe

Description

Make a flavorful Korean BBQ Chicken Sandwich featuring sticky, sweet, and spicy glazed chicken on a soft bun with crisp toppings.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into sandwich-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons Gochujang (Korean chili paste)
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon black pepper
  • 4 brioche buns or potato rolls
  • 1 tablespoon vegetable oil
  • For Quick Slaw: 1 cup shredded cabbage, 1/4 cup mayonnaise, 1 tablespoon rice vinegar, 1 teaspoon sugar, salt to taste
  • For Garnish: Sesame seeds, sliced green onions


Instructions

  1. Combine soy sauce, Gochujang, honey, rice vinegar, sesame oil, garlic, ginger, and pepper in a bowl to make the marinade.
  2. Add the chicken pieces to the marinade, toss to coat completely, and let it marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. Prepare the quick slaw: Mix shredded cabbage with mayonnaise, rice vinegar, sugar, and salt. Set aside.
  4. Heat the vegetable oil in a large skillet or grill pan over medium-high heat.
  5. Remove the chicken from the marinade, letting excess drip off, and place the chicken in the hot pan. Cook for 5-7 minutes per side until cooked through and slightly caramelized.
  6. If any marinade remains, pour it over the chicken during the last minute of cooking to create a sticky glaze.
  7. Lightly toast the inside of the buns.
  8. Assemble the sandwich: Place a piece of glazed chicken on the bottom bun. Top generously with the quick slaw. Sprinkle with sesame seeds and green onions, then place the top bun on.

Notes

  • For extra heat, add a pinch of Gochugaru (Korean chili flakes) to the marinade.
  • You can grill the chicken instead of pan-frying for a smoky flavor.
  • Use thick-cut potato rolls as they hold up well against the sticky sauce.
