- 1 cup fresh or frozen blueberries
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons chia seeds
- 1-2 tablespoons maple syrup (optional, adjust to your sweetness preference)
Instructions
- Place the blueberries in a small saucepan over medium heat.
- Cook, mashing the berries occasionally with a fork, until they break down and start to simmer, about 5-7 minutes.
- Remove the saucepan from the heat. Stir in the lemon juice and lemon zest.
- If using, add the maple syrup and mix well.
- Whisk in the chia seeds quickly to prevent clumping.
- Let the mixture sit for 5 minutes, then stir again thoroughly.
- Transfer the jam to a clean jar. Let it cool to room temperature, then cover and refrigerate for at least 2 hours to thicken completely.
Notes
- For a smoother jam, you can briefly blend the cooked berries with an immersion blender before adding the chia seeds.
- Adjust the maple syrup amount based on the sweetness of your blueberries. Taste before adding sweetener.
- This jam thickens more as it cools. If it seems too thick after refrigeration, stir in a teaspoon of water or lemon juice.
