Description

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the grated zucchini.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bars cool completely in the pan.
  10. While the bars are cooling, prepare the glaze. In a medium bowl, whisk together the powdered sugar, 2 tablespoons of lemon juice, and optional lemon zest until smooth. Add more lemon juice, a teaspoon at a time, if needed to reach your desired consistency.
  11. Once the bars are completely cooled, drizzle the glaze over the top. Let the glaze set before cutting into bars.
