Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the grated zucchini.
- Spread the batter evenly into the prepared baking pan.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan.
- While the bars are cooling, prepare the glaze. In a medium bowl, whisk together the powdered sugar, 2 tablespoons of lemon juice, and optional lemon zest until smooth. Add more lemon juice, a teaspoon at a time, if needed to reach your desired consistency.
- Once the bars are completely cooled, drizzle the glaze over the top. Let the glaze set before cutting into bars.
