  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (adjust to your heat preference)
  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 2 large carrots, peeled and chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the garlic and ginger, cooking for 1 minute until fragrant.
  4. Add the cumin, coriander, turmeric, and cayenne pepper. Cook for 30 seconds, stirring constantly.
  5. Add the rinsed lentils, vegetable broth, carrots, and diced tomatoes to the pot.
  6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until lentils and carrots are tender.
  7. Stir in the coconut milk, salt, and pepper. Heat through gently, but do not boil after adding coconut milk.
  8. Taste and adjust seasoning as needed.
  9. Serve hot, garnished with fresh cilantro.

Notes

  • For a richer flavor, toast the dry spices lightly before adding the liquids.
  • If the curry becomes too thick, add a splash more vegetable broth or water until you reach your desired consistency.
