- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 cup brown or green lentils, rinsed
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 cup frozen peas
- 1/4 cup tomato paste
- 1 tablespoon soy sauce or tamari
- Salt and black pepper to taste
- 3 pounds potatoes, peeled and quartered
- 1/2 cup unsweetened plant milk
- 4 tablespoons vegan butter
- Pinch of nutmeg
Instructions
- Prepare the topping: Boil potatoes until tender. Drain them well.
- Mash the cooked potatoes with plant milk, vegan butter, and nutmeg until smooth. Season with salt and pepper. Set aside.
- Prepare the filling: Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until softened, about 5-7 minutes.
- Add garlic and cook for one minute more until fragrant.
- Stir in the rinsed lentils, vegetable broth, thyme, rosemary, tomato paste, and soy sauce.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until lentils are tender and most liquid is absorbed. Stir occasionally.
- Stir in the frozen peas. Taste the filling and adjust seasoning with salt and pepper.
- Preheat your oven to 400°F (200°C).
- Spoon the lentil filling into a 9×13 inch baking dish.
- Carefully spread the mashed potato topping evenly over the lentil mixture. You can create texture with a fork.
- Bake for 20-25 minutes, or until the topping is lightly golden brown and the filling is bubbly.
- Let the pie rest for 10 minutes before serving.
Notes
- For an extra golden crust, brush the top of the potatoes lightly with melted vegan butter before baking.
- If your lentil mixture seems too dry during simmering, add a splash more broth.
- You can substitute sweet potatoes for regular potatoes for a different flavor profile.
