- 4 large Russet potatoes, peeled and diced
- 1 cup chopped yellow onion
- 4 cloves garlic, minced
- 6 slices bacon, cooked and crumbled
- 4 cups chicken broth
- 2 cups milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh chives or green onions
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and black pepper to taste
Instructions
- In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Sprinkle the flour over the onions and garlic and stir for 1 minute to create a roux.
- Gradually whisk in the chicken broth, ensuring no lumps form.
- Add the diced potatoes to the pot. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until the potatoes are tender.
- Using an immersion blender, carefully blend the soup until mostly smooth, leaving some potato chunks for texture. Alternatively, transfer about half the soup to a regular blender and blend until smooth, then return it to the pot.
- Stir in the milk and heavy cream. Heat gently, but do not boil.
- Add the shredded cheddar cheese and stir until melted and the soup is creamy.
- Season with salt and black pepper to your liking.
- Ladle the soup into bowls. Top each serving with crumbled bacon, a dollop of sour cream, and chopped chives or green onions.

- For a thicker soup, use less broth or simmer uncovered for a few extra minutes.
