- 1/2 cup mayonnaise
- 1/4 cup crumbled cotija cheese

- 1/4 teaspoon cayenne pepper (optional)

Instructions
- Preheat your grill or broiler.
- Grill or broil the corn until lightly charred on all sides. Let cool slightly, then cut the kernels off the cobs.
- In a large bowl, combine the corn kernels, mayonnaise, cotija cheese, cilantro, lime juice, chili powder, and cayenne pepper (if using).
