Description

Ingredients

  • 1 (28 ounce) bag frozen french fries
  • 2 cups corn kernels, fresh or frozen
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1/2 teaspoon chili powder, plus more for garnish
  • 1/4 teaspoon smoked paprika
  • 1/4 cup crumbled cotija cheese, plus more for garnish
  • 2 tablespoons chopped fresh cilantro, plus more for garnish
  • 1/4 cup finely diced red onion
  • Salt and black pepper to taste


Instructions

  1. Preheat your oven and bake the french fries according to package directions until golden and crispy.
  2. While the fries bake, heat a large skillet over medium-high heat. Add the corn kernels and cook, stirring occasionally, until slightly charred, about 5-7 minutes. If using frozen corn, thaw it first.
  3. In a medium bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, and smoked paprika.
  4. Add the charred corn, 1/4 cup cotija cheese, 2 tablespoons cilantro, and red onion to the mayonnaise mixture. Stir to combine. Season with salt and pepper to taste.
  5. Once the fries are ready, transfer them to a large serving platter or individual plates.
  6. Spoon the Mexican street corn mixture evenly over the hot fries.
  7. Garnish with additional crumbled cotija cheese, a sprinkle of chili powder, and fresh cilantro. Serve immediately.

  • For extra heat, add a pinch of cayenne pepper to the corn mixture.
  • If cotija cheese is unavailable, you can substitute with crumbled feta cheese.
