Ingredients

  • 12 oz fettuccine pasta
  • 1 cup low-fat cottage cheese
  • 1/2 cup non-fat Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon nutmeg
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Cook fettuccine according to package directions. Reserve about 1/2 cup of pasta water before draining.
  2. While pasta is cooking, combine cottage cheese, Greek yogurt, Parmesan cheese, minced garlic, and nutmeg in a blender.
  3. Blend until completely smooth and creamy.
  4. Drain the pasta and return it to the pot.
  5. Pour the blended sauce over the hot pasta.
  6. Toss well to coat the pasta evenly. Add a little reserved pasta water if needed to reach desired consistency.
  7. Season with salt and pepper to taste.
