Low Carb Lemon Dill Chicken Bowl

Description

A quick and flavorful low-carbohydrate chicken bowl featuring bright lemon and fresh dill flavors, served over cauliflower rice.


Ingredients

  • 1.5 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried oregano
  • Zest of 1 large lemon
  • Juice of 1 large lemon
  • 2 tablespoons fresh dill, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream (optional, for sauce)
  • 1/4 cup crumbled feta cheese
  • 4 cups riced cauliflower (fresh or frozen)
  • 2 cups mixed greens (spinach, romaine)
  • 1/2 English cucumber, diced


Instructions

  1. Season the chicken pieces with salt, pepper, and oregano.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
  4. Pour in the lemon juice and chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  5. Stir in the heavy cream (if using), lemon zest, and chopped fresh dill. Let the sauce thicken slightly, about 2 minutes.
  6. Return the cooked chicken to the skillet and toss to coat in the sauce.
  7. If using riced cauliflower, prepare it according to package directions or sauté it in a separate pan with a little oil until tender.
  8. To assemble the bowls, divide the riced cauliflower and mixed greens among four bowls.
  9. Top the base with the lemon dill chicken mixture.
  10. Garnish each bowl with diced cucumber and crumbled feta cheese. Serve immediately.

Notes

  • For a quicker preparation, use pre-riced cauliflower and cook it in the microwave.
  • If you skip the heavy cream, the sauce will be lighter and broth-based.
  • This recipe works well for meal prepping; store the chicken and cauliflower base separately and combine just before eating.
