- 1.5 lbs flank steak, thinly sliced against the grain
- 1 tablespoon avocado oil or coconut oil
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 cup low-sodium soy sauce or tamari
- 1/4 cup water
- 1/4 cup erythritol or monk fruit sweetener
- 1 teaspoon xanthan gum (for thickening)
- 1/2 teaspoon black pepper
- 2 green onions, sliced (for garnish)
- 1 cup broccoli florets (optional addition)
Instructions
- Place the sliced steak in a bowl. In a separate small bowl, whisk together the soy sauce, water, sweetener, and black pepper. Set aside.
- Heat the avocado oil in a large skillet or wok over medium-high heat. Add the beef slices in a single layer, working in batches if necessary, and sear until browned on both sides. Remove the beef and set it aside.
- Reduce the heat to medium. Add the sesame oil to the skillet. Add the minced garlic and grated ginger. Cook for about 30 seconds until fragrant.
- If using broccoli, add it now and stir fry for 2-3 minutes until slightly tender.
- Return the beef to the skillet. Pour the reserved sauce mixture over the beef and vegetables. Bring the sauce to a simmer.
- In a very small bowl, mix the xanthan gum with 1 tablespoon of cold water to create a slurry. Slowly whisk this slurry into the simmering sauce. Continue stirring until the sauce thickens to your desired consistency, which should take less than one minute.
- Remove from heat immediately. Garnish with sliced green onions before serving over cauliflower rice or shirataki noodles.
Notes
- For a deeper flavor, use coconut aminos instead of soy sauce if you need to keep the dish gluten-free and soy-free.
- Xanthan gum is a powerful thickener; start with less than the recipe calls for if you are unsure of the amount needed for your preferred sauce thickness.
- You can substitute the flank steak with sirloin or skirt steak.
