Description
Make this easy, cheesy, low carb taco casserole using ground beef and a cream cheese base instead of tortillas. It is a satisfying keto comfort food meal.

- 1.5 lb ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 packet (1 oz) low carb taco seasoning (check label for carbs)
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup water
- 1 cup shredded cheddar cheese, divided
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro (for garnish)
- 1 avocado, mashed (for optional crema)
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
- Add the ground beef to the skillet. Cook, breaking it up with a spoon, until fully browned. Drain off any excess grease.
- Stir the taco seasoning and water into the beef mixture. Simmer for 5 minutes until the sauce thickens slightly. Remove from heat.
- In a separate bowl, mix the softened cream cheese and sour cream until smooth.
- Spread half of the cream cheese mixture evenly across the bottom of the prepared baking dish.
- Spoon the seasoned ground beef mixture over the cream cheese layer.
- Sprinkle half of the cheddar cheese and all of the Monterey Jack cheese over the beef layer.
- Top with the remaining cream cheese mixture, spreading gently. Sprinkle the remaining cheddar cheese on top.
- Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
- Let the casserole rest for 5 minutes before cutting. Serve topped with fresh cilantro and optional mashed avocado or a dollop of sour cream.
Notes
- If you cannot find a low carb taco seasoning, mix 1 tablespoon chili powder, 1 teaspoon cumin, 1/2 teaspoon paprika, 1/2 teaspoon garlic powder, and 1/4 teaspoon oregano.
- For a quick avocado crema, mix the mashed avocado with 2 tablespoons of sour cream and a pinch of salt.
- This recipe works well with ground turkey or ground chicken if you prefer poultry.
