Description

Make this easy, cheesy, low carb taco casserole using ground beef and a cream cheese base instead of tortillas. It is a satisfying keto comfort food meal.


Ingredients

  • 1.5 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 packet (1 oz) low carb taco seasoning (check label for carbs)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup water
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro (for garnish)
  • 1 avocado, mashed (for optional crema)


Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  3. Add the ground beef to the skillet. Cook, breaking it up with a spoon, until fully browned. Drain off any excess grease.
  4. Stir the taco seasoning and water into the beef mixture. Simmer for 5 minutes until the sauce thickens slightly. Remove from heat.
  5. In a separate bowl, mix the softened cream cheese and sour cream until smooth.
  6. Spread half of the cream cheese mixture evenly across the bottom of the prepared baking dish.
  7. Spoon the seasoned ground beef mixture over the cream cheese layer.
  8. Sprinkle half of the cheddar cheese and all of the Monterey Jack cheese over the beef layer.
  9. Top with the remaining cream cheese mixture, spreading gently. Sprinkle the remaining cheddar cheese on top.
  10. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  11. Let the casserole rest for 5 minutes before cutting. Serve topped with fresh cilantro and optional mashed avocado or a dollop of sour cream.

Notes

  • If you cannot find a low carb taco seasoning, mix 1 tablespoon chili powder, 1 teaspoon cumin, 1/2 teaspoon paprika, 1/2 teaspoon garlic powder, and 1/4 teaspoon oregano.
  • For a quick avocado crema, mix the mashed avocado with 2 tablespoons of sour cream and a pinch of salt.
  • This recipe works well with ground turkey or ground chicken if you prefer poultry.
