Description

A recipe for baked chicken breasts topped with a creamy sauce, bacon, and extra cheese, inspired by Malibu Chicken.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 slices bacon, cooked and crumbled
  • 4 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 1/2 teaspoon dried Italian seasoning
  • 1 cup shredded Monterey Jack cheese


Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
  2. Season the chicken breasts on both sides with salt, pepper, and garlic powder.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until lightly browned. Remove the skillet from heat.
  4. In a medium bowl, combine the softened cream cheese, mayonnaise, Parmesan cheese, heavy cream, and Italian seasoning. Mix until smooth.
  5. Spread an equal amount of the cream cheese mixture over the top of each chicken breast in the skillet.
  6. Sprinkle the crumbled cooked bacon evenly over the cream cheese topping.
  7. Top the bacon with the shredded Monterey Jack cheese.
  8. Transfer the skillet to the preheated oven. Bake for 18 to 22 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit and the cheese is melted and bubbly.
  9. Let the chicken rest for 5 minutes before serving.

Notes

  • For crispier bacon, cook it separately in a pan or microwave until fully crisp before crumbling.
  • If you do not have an oven-safe skillet, transfer the seared chicken to your prepared baking dish before adding toppings and baking.
  • Serve this chicken over rice or with steamed broccoli to balance the richness.
