Ingredients

  • 1/2 cup sugar
  • 1/4 cup water
  • 2 envelopes unflavored gelatin
  • 1/4 cup cold water


Instructions

  1. In a saucepan, combine mango puree, sugar, and 1/4 cup water. Heat over medium heat, stirring until sugar dissolves.
  2. In a small bowl, sprinkle gelatin over cold water. Let stand for 5 minutes to bloom.
  3. Add bloomed gelatin to the warm mango mixture. Stir until completely dissolved. Do not boil.
  4. Pour the mixture into individual serving cups.
  5. Refrigerate for at least 4 hours, or until set.

Notes

  • Use ripe mangoes for the best flavor.
  • Adjust sugar to your preference.
  • For a smoother texture, strain the mango puree.
