Enjoy a taste of summer with these refreshing Mango Lassi Popsicles. They’re a delightful frozen treat inspired by the classic Indian yogurt-based drink, perfect for cooling down on a warm day.

Ingredients

Scale
  • 2 cups ripe mango chunks, frozen
  • 1 cup plain yogurt
  • 1/2 cup milk
  • 2 tablespoons honey or maple syrup, or to taste
  • 1/4 teaspoon ground cardamom
  • Pinch of salt

Instructions

  1. Combine frozen mango chunks, yogurt, milk, honey or maple syrup, cardamom, and salt in a blender.
  2. Blend until smooth and creamy. If the mixture is too thick, add a splash more milk.
  3. Pour the mixture into popsicle molds.
  4. Insert popsicle sticks.
  5. Freeze for at least 4-6 hours, or until solid.
  6. To unmold, run the popsicle molds under warm water for a few seconds.
