Description

Enjoy a healthy and delicious snack with these crunchy Maple Chili Roasted Chickpeas. They offer a perfect balance of sweet maple and spicy chili, making them an ideal high-protein, guilt-free munchie.

Ingredients

Scale
  • 2 cans (15 ounces each) chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the chickpeas thoroughly dry with paper towels. The drier they are, the crispier they will become.
  3. In a medium bowl, toss the dried chickpeas with olive oil until evenly coated.
  4. In a small bowl, whisk together the maple syrup, chili powder, smoked paprika, cayenne pepper (if using), salt, and black pepper.
  5. Pour the maple chili mixture over the chickpeas and toss to coat them completely.
  6. Spread the coated chickpeas in a single layer on the prepared baking sheet.
  7. Roast for 25-30 minutes, stirring halfway through, until the chickpeas are golden brown and crunchy.
  8. Let them cool slightly on the baking sheet before enjoying.

Notes

  • For an extra crispy texture, you can remove the skins from the chickpeas after rinsing and drying them.
  • Adjust the amount of chili powder and cayenne pepper to suit your spice preference.
  • Store any leftovers in an airtight container at room temperature for up to 3-4 days. They may lose some crispiness over time.
