- 1.5 lbs salmon fillet
- 1 lb broccoli florets
- 1 lb sweet potato, cubed
- 1 red onion, cut into wedges
- 3 tablespoons olive oil
- 1/4 cup maple syrup
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss broccoli florets, sweet potato cubes, and red onion wedges with olive oil, salt, and pepper on a large baking sheet.
- Roast the vegetables for 20 minutes.
- While vegetables are roasting, whisk together maple syrup, soy sauce, Dijon mustard, and minced garlic in a small bowl.
- Remove the baking sheet from the oven. Push the vegetables to one side and place the salmon fillet on the other side.
- Brush the salmon generously with the maple glaze.
- Return the baking sheet to the oven and bake for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
- Serve immediately.
