Description

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 4 cloves garlic, minced
  • 3 cups chicken broth
  • 12 ounces pasta (penne or rotini work well)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped (for garnish)


Instructions

  1. Season the chicken pieces with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 4 to 5 minutes. Remove the chicken and set it aside.
  3. Add the chopped sun-dried tomatoes and minced garlic to the same pot. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth and bring the mixture to a boil. Add the dry pasta to the pot.
  5. Reduce the heat to medium-low, cover, and cook according to the pasta package directions, stirring occasionally, until the pasta is al dente, about 8 to 10 minutes.
  6. Stir in the heavy cream and grated Parmesan cheese. Continue to cook, stirring constantly, until the sauce thickens slightly, about 2 minutes.
  7. Return the cooked chicken to the pot. Stir everything together until the chicken is heated through and coated in the sauce.
  8. Serve immediately, garnished with fresh chopped basil.
