  • 8 ounces mascarpone cheese, softened
  • 1/2 cup granulated sugar
  • 2 tablespoons matcha powder, plus more for dusting

  • 1/4 cup hot water
  • 1/4 cup granulated sugar
  • 1/4 cup matcha powder
  • 1/4 cup rum or coffee liqueur (optional)
  • 1 pound ladyfingers
  • 1/4 cup hot water
  • 1/4 cup matcha powder
  • 1/4 cup granulated sugar


Instructions

  1. In a large bowl, whip the heavy cream until stiff peaks form.
  2. In a separate bowl, beat the softened mascarpone cheese with 1/2 cup granulated sugar and vanilla extract until smooth.
  3. Gently fold the whipped cream into the mascarpone mixture.
  4. In a small bowl, whisk together 1/4 cup hot water, 1/4 cup matcha powder, and 1/4 cup granulated sugar until smooth. Stir in rum or coffee liqueur if using.
  5. In a shallow dish, combine 1/4 cup hot water, 1/4 cup matcha powder, and 1/4 cup granulated sugar. Stir until sugar is dissolved.
  6. Quickly dip each ladyfinger into the matcha syrup, ensuring they are moistened but not soggy.
  7. Arrange a layer of dipped ladyfingers in the bottom of a serving dish.
  8. Spread half of the mascarpone cream mixture over the ladyfingers.
  9. Repeat with another layer of dipped ladyfingers and the remaining mascarpone cream.
  10. Cover and refrigerate for at least 4 hours, or preferably overnight.
  11. Before serving, dust generously with additional matcha powder.
