Instructions
- In a large bowl, whip the heavy cream until stiff peaks form.
- In a separate bowl, beat the softened mascarpone cheese with 1/2 cup granulated sugar and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture.
- In a small bowl, whisk together 1/4 cup hot water, 1/4 cup matcha powder, and 1/4 cup granulated sugar until smooth. Stir in rum or coffee liqueur if using.
- In a shallow dish, combine 1/4 cup hot water, 1/4 cup matcha powder, and 1/4 cup granulated sugar. Stir until sugar is dissolved.
- Quickly dip each ladyfinger into the matcha syrup, ensuring they are moistened but not soggy.
- Arrange a layer of dipped ladyfingers in the bottom of a serving dish.
- Spread half of the mascarpone cream mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone cream.
- Cover and refrigerate for at least 4 hours, or preferably overnight.
- Before serving, dust generously with additional matcha powder.
