Description
Make simple quesadillas using Mediterranean ingredients like feta cheese, spinach, and sun-dried tomatoes inside a flour tortilla.

- 4 large flour tortillas
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 cup fresh spinach, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup Kalamata olives, sliced
- 1 teaspoon dried oregano
- 2 tablespoons olive oil
- 1/2 cup cooked, shredded chicken (optional)
Instructions
- Heat a large skillet or griddle over medium heat. Lightly brush one side of a tortilla with olive oil.
- Place the oiled side down on the skillet. Sprinkle half of the mozzarella cheese over the tortilla.
- Distribute half of the feta cheese, spinach, sun-dried tomatoes, olives, oregano, and chicken (if using) evenly over the cheese layer.
- Sprinkle the remaining mozzarella cheese on top of the fillings.
- Place a second tortilla on top of the fillings.
- Cook for 3 to 4 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
- Carefully flip the quesadilla using a large spatula. Cook for another 3 to 4 minutes until the second side is golden and the cheese is fully melted.
- Remove from the skillet, slice into wedges, and repeat with the remaining ingredients.
Notes
- Serve these quesadillas with a side of tzatziki sauce for dipping.
- You can substitute halloumi cheese for feta for a firmer texture.
- Use whole wheat tortillas for a slightly different flavor profile.
