Mediterranean Quesadillas with Feta and Spinach

Description

Make simple quesadillas using Mediterranean ingredients like feta cheese, spinach, and sun-dried tomatoes inside a flour tortilla.


Ingredients

  • 4 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 cup fresh spinach, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup Kalamata olives, sliced
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • 1/2 cup cooked, shredded chicken (optional)


Instructions

  1. Heat a large skillet or griddle over medium heat. Lightly brush one side of a tortilla with olive oil.
  2. Place the oiled side down on the skillet. Sprinkle half of the mozzarella cheese over the tortilla.
  3. Distribute half of the feta cheese, spinach, sun-dried tomatoes, olives, oregano, and chicken (if using) evenly over the cheese layer.
  4. Sprinkle the remaining mozzarella cheese on top of the fillings.
  5. Place a second tortilla on top of the fillings.
  6. Cook for 3 to 4 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
  7. Carefully flip the quesadilla using a large spatula. Cook for another 3 to 4 minutes until the second side is golden and the cheese is fully melted.
  8. Remove from the skillet, slice into wedges, and repeat with the remaining ingredients.

Notes

  • Serve these quesadillas with a side of tzatziki sauce for dipping.
  • You can substitute halloumi cheese for feta for a firmer texture.
  • Use whole wheat tortillas for a slightly different flavor profile.
