  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • For the Dressing:
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook the quinoa: Combine rinsed quinoa and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until liquid is absorbed. Let stand for 5 minutes, then fluff with a fork.
  2. Prepare the vegetables: While quinoa cooks, prepare the tomatoes, cucumber, red onion, olives, parsley, and mint.
  3. Make the dressing: In a small bowl, whisk together olive oil, lemon juice, minced garlic, and dried oregano. Season with salt and pepper.
  4. Combine ingredients: In a large bowl, combine the cooked quinoa, chickpeas, tomatoes, cucumber, red onion, olives, feta cheese, parsley, and mint.
  5. Dress the salad: Pour the dressing over the salad and toss gently to combine.
