Description
This melt-in-your-mouth braised beef is the ultimate comfort food for busy families. Using your slow cooker, you can achieve incredibly tender and flavorful beef with minimal effort. It’s a set-and-forget meal that will have everyone asking for seconds.

- 2.5 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup red wine (optional, can substitute with more beef broth)
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and freshly ground black pepper to taste
- 2 tablespoons cornstarch (mixed with 2 tablespoons cold water for thickening, optional)
Instructions
- Pat the beef chuck roast dry and season generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the beef roast on all sides until deeply browned. Remove from skillet and place in your slow cooker.
- Add the sliced onion to the same skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Pour in the beef broth, red wine (if using), Worcestershire sauce, and soy sauce. Stir to deglaze the pan, scraping up any browned bits from the bottom.
- Stir in the dried thyme and rosemary. Pour this liquid mixture over the beef in the slow cooker.
- Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the beef is fork-tender.
- Once cooked, remove the beef from the slow cooker and shred it using two forks.
- If you prefer a thicker sauce, you can thicken the cooking liquid. Skim off any excess fat from the liquid. In a small bowl, whisk together cornstarch and cold water. Pour this slurry into the slow cooker with the liquid, stir well, and cook on high for an additional 30 minutes, or until thickened.
- Return the shredded beef to the thickened sauce and stir to coat.
- Serve hot.
Notes
- For an even richer flavor, you can add chopped carrots and celery along with the onion.
- This beef is delicious served over mashed potatoes, rice, or with crusty bread.
- Leftovers can be refrigerated for up to 3 days and reheat well.
